We've taken our traditional recipe for coconut macaroons, shaped them into little birds nests and baked them until they were slightly golden brown.

Filled with a delicious dark chocolate (72%) center, then topped with chocolate Easter Egg candies, these cookies are the perfect treat for Spring and Easter!

Celebrating Fathers

6/12/2014

Last month for Mother's Day, I told you a little bit about the women of my family, their love of baking and the long tradition in our family of passing down favorite recipes from one generation to the next. This month I would like to honor the men and fathers in my family.

As a baker, I want to know where my ingredients come from and I am proud to say that many of the men in my family were farmers.

On my father’s side, my great grandfather, John (Papa) Schaal operated a farm in Kansas. My grandfather, Dr. Lawrence Schaal, was a plant pathologist with the Department of Agriculture and managed an experimental station in Cheyenne, Wyoming where crops suitable for the harsh climate of Colorado and Wyoming were developed. In addition to food crops, Grandpa also developed a breed of grass capable of growing on, and slowly breaking down, shale tailings produced by western oil companies.

On my mother's side, my great grandfather, James Pirie, moved from northern Scotland to build a farm in Fort Collins, Colorado. My grandfather, Fred Thompson, served as the Ranch Foreman for a large cattle ranch high in the Colorado Rockies near the town of Fairplay.

Ties to the earth and to earth science continue with my father and husband. My father, John Lawrence Schaal, holds a degree in zoology and during his long career with the Department of Labor, worked closely with migrant farm laborers throughout Texas, California and Colorado. My husband, Michael Abrams, is a geologist and volcanologist specializing in satellite imagery of earth. Together with Michael’s father, Dr. Bernard Abrams, they share a love for world travel and seeking out fine wines and cuisine.

Below are a few photos of these wonderful men.

Best wishes and a very happy Father's Day!
